A soba restaurant on Rue Saint-Roch in the 1st, named for the buckwheat noodles of Echizen in Japan's Fukui Prefecture. The best soba place in Paris, in my opinion. I know everyone talks about Abri Soba, but I preferred EchizenSOBA.
