These are the three restaurants in Hue I have eaten at myself and would recommend.
A Huế restaurant on Phó Đức Chính serving the city's traditional small dishes, including bánh khoái and nem lụi. Our tour guide took us here to get a real taste of local cuisine. I'm recommending this place more as a cultural experience as it's a must to fully experience Vietnamese food. It has a lot of the different street food items you'd normally have to go to different stalls to try all in one restaurant.

The fine dining restaurant at Ancient Huế, in Kim Long about 3 km west of the centre. Beautiful restaurant, the setting is truly lovely. The food is good upscale Vietnamese fare.

A restaurant in a French colonial villa on Đặng Trần Côn, near the Citadel, serving Huế dishes. Really fun setting that brings together French and Vietnamese styles, and it was also the first time I tried Bún bò Huế which was really delicious.
