A small bar behind the San Telmo museum, opened in 1999 by chefs Alex Montiel and Iñaki Gulín, where nothing sits on the counter: hot pintxos are cooked to order from the board, a way of doing things it helped pioneer. One of the best places for pintxos in San Sebastian.

A gastroteka on Calle Mayor in the Parte Vieja, with modern pintxos, hot dishes like grilled octopus and croquetas, and gin and tonics counted among the city's best. On busy nights the crowd spills out onto the church steps. Traditional pintxos places with a great wine list. If you sit outside you'll enjoy a lovely view of the Basilica of Santa María del Coro.

The bar on 31 de Agosto that the Rivera brothers opened in 1959, where Santiago Rivera created the burnt Basque cheesecake around 1990, the tart now copied all over the world. Wonderful pintxos place famous for their burnt cheesecake.

A big, busy bar and restaurant on 31 de Agosto, the only street in the Parte Vieja to survive the fire of 1813, hung with hams and best known for its solomillo pintxo: aged sirloin on bread with a fried green pepper. Nice seafood and steak traditional restaurant.

A pintxos bar on Narrika Kalea in the Parte Vieja, a favourite with locals, with old photographs of the city on the walls. Tapas bar - one of the must try places during your pintxos adventures.

Elegant, three-Michelin-star restaurant from 1897, with tasting menus specialising in modern Basque cuisine. It is also on the list of the world's best restaurants. Personally it was a little bit too sophisticated for my taste, however, it's a great experience. Remember to book ahead!
